Black Bean Enchiladas

Ingredients

1 onion, chopped

2 cloves garlic, minced

1 green pepper, chopped

1 can, 15 oz, black beans

1 can, 15 oz, corn

1 can, 15 oz, diced tomatoes

1 can, 8 oz, red enchilada sauce 

8 oz cream cheese, softened

Juice of 1 lemon

2 tsp cumin

1 tsp oregano 

1 cup cheddar cheese 

6 flour tortillas

Optional:

Chopped avocado 

Chopped tomatoes 

Sour cream 

Directions

Preheat oven to 375 degrees F

Spray 9X13 baking dish with oil

Heat olive oil in large skillet over medium heat 

Cook onion and green pepper until tender

Reduce heat to low

Add black beans, corn and cream cheese 

Stir until cream cheese melted

Add spices

Spread a thin layer of enchilada sauce in baking dish

Spread bean mixture evenly down the center of each tortilla

Roll up each tortilla and place seam side down in baking dish

Pour remaining enchilada sauce over each tortilla

Sprinkle cheese over tortillas

Bake until bubbly about 30 minutes 

Optional: serve with chopped avocado, chopped tomatoes and/or sour cream
