My Black Bean Soup

Stove top or crockpot

Ingredients 

1 Medium/large yellow Onion, diced

2 Cloves garlic, minced

1 Jalapeños, diced (Optional) Today I used

    about 1/4 cup of "cowboy candy"

2 Tbsp olive oil (if sautéing)

45 oz black beans (3 cans)

15 oz fire roasted diced tomatoes (1 can)

16 oz corn (1 can)

1-2 tsp ground cumin, to taste

1/2 tsp dried oregano 

1 tsp smoked paprika

3/4 cup salsa

1 small green bell pepper, diced

2 Tbsp lime juice (1 lime, optional)

1 tsp chili powder

Salt and pepper to taste 

Shredded cheddar cheese

Sour cream

Fritos

Instructions

Dice the veggies and sauté in a Dutch oven/soup pot

Use a blender or food processor to purée two of the cans of beans

Put the canned veggies and beans into sauté

     pot 

Bring to boil

Lower to simmer for 1/2 hour

Serve with toppings:

Shredded cheddar cheese

Sour cream

Fritos

 

For a crock pot I just put all ingredients into it without sautéing and cook on low for about 3 hours.
